While your slices are toasting, you can prep the toppings.

For a more breakfast-forward dish, mashed avocado and a sunny-side up egg make a great on-the-go meal when piled on top of sweet potato toast. For a sweet combo, spread almond butter onto your toasted sweet potato and top with fresh banana slices and a sprinkling of cinnamon.
